    Question about MH's Texas Mop/Sauce

    Has anybody tried adding the jus from the crutch wrap to the TMS? If so, how did it turn out? I added about a 50/50 mix of beer and beef broth (both things that are in the TMS) to my crutch wrap.

    I haven't added anything to my crutch in a looooong time. So I have very little juice to speak of when I am done.

    I like to use this stuff(2/3) with some BBQ sauce(1/3) for burnt ends. The Mop sauce. I thicken it with Wondra flour, and strain it.

      Thanks, Jerod. I read on another site that Shanks needed to actually braise a little so that's why I added some liquid to the crutch.

        Oh yeh, braise away. I need to do the same thing with the crappy short ribs we have around here.

      I used au jus from our prime rib to add to my mop sauce recently, at work. We used it with veal osso bucco. It was great. Somewhere, I have the veal osso bucco posted with a pic.

        I ended up adding some, but not all, of the jus/braising liquid to the Texas Mop. I thought it was an improvement. #1 thought the Texas Mop was too sweet in general but she didn't hate it by any means.
