    Need help smoking jalapeños

    Does anyone have the proper technique for making Chipotles? Also looking for an Adobo recipe. Thanks.

      Interesting link. If you do smoke them, let us know how they turned out. I noticed that they didn't post the temperature of the smoke though.

            I haven't tried this yet, but here are a couple processes/recipes I saved.

            A guy on a Facebook forum smoked his at around 165 for around 12 hours and then used his dehydrator for about 30 hours.

            Another guy from the cookshack forum uses this process:
            • Select large, red jalapeno peppers
            • Wash and dry
            • Place whole peppers on smoker's grills (use a mat if you have one to keep them from falling through grill)
            • Do not allow peppers to touch. This is important for even circulation of heat and smoke
            • Smoke at 225º for four hours with four ounces of hickory wood. Turn the oven temperature down to 150-175ºF
            • Leave the peppers in the smoker for 24 hours, until completely dry
            • They will be dark red, wrinkly, and flattened out
