    Blackened fish sandwiches

    These have become a favorite around my house. First I Hit the fish with blackening season and cook on hot griddle. The sauce is a combo of mayo and mango and peach chutney.
    top with tomato, avocado and pickled red onions and serve on a toasted bun.

      Mahi, but I reckon grouper or snapper would be good too

      But if mahogany is the color of the sear on the meat or the toast on the bread that's ok, right?

        Golleee, I just went from hungry to starving!!! Not sure the fish sticks in the freezer will come close to that.....

          that crust is perfect! when you say "hot griddle" how did you get the right temp. medium for a long preheat or did you just get it screaming hot on high?

            Preheated the grill with all three burners on medium high for about 15 minutes. I think it’s traditional to cook in melted butter, but I just put a layer on canola oil down on the griddle.

            I eat mine with chipotle Mayo, pickled red onions, and cilantro. I may give this a try. What fish? It's always catfish from one of the stock tanks here.
