    I wrap with foil on bottom, and paper on top. foil collects the au jus, paper allows to breath.

      I sometimes feel like I’m a crutch to my wife. And she often wraps me over the head when I mess up. I got nothin’ further to add, just wanted to share

      I gave up rapping years ago. All he little kids on the block would laugh at me.

        I highly recommend punting, and experimenting, and seeing which bark you may like, and the best way to achieve, quality bark, Don't worry about any of that unless you render the fat in the brisket correctly first. I find the joy in this is setting the book down, and just eating bbq, and see which way it points my cooking.
