Not Pleased but No Peaved.
My presupposed projection for perfection was put paid to when my processing was not that polished.
The 3 P's that tripped me up.
1) Pastrami.
My first attempt at home cured brisket per the free side sans the spices and sugar just the Prague #1 and salt. Doc's calculator said 16.3 day's in the brine. Then a 12 hour desalination. Katz pastrami rub and 7.5 hours in the heat.
It was OK a little salty but nowhere near my expectation.
2) Poppers
I don't believe one can easily mess up poppers. I only mannaged to find "undersize" jalapeno's that I filled with med fat jalapeno and chili cream cheese and grated cheddar cheese with a sliver of bacon.
3) Plagiarized Potato Pie.
Tried making Henrik sweat potato pie. I had convinced myself it would taste fine but it didnt. Had nothing to do with Hank's recipe but with my total dislike of nutmeg. I pondered leaving the nutmeg out but ended up not (always try the original first then alter according). Just like I just can't eat anything that has margarine in or on it the same applies to nutmeg. Nevertheless I know it will taste good to me minus the nutmeg. The pie got a thumbs up from the wife.
My postscript is I will persevere my probable potential to present a more promising product.
