I just smoked my first fatty. And I’m still dazed.

Finally got around to trying one of these beauties.
Why have I not gone down this path before???

I went with a meat lovers pizza themed deal.

Ham, pepperoni, mozzarella and sauce inside a sausage roll up. And wrapped in a bacon weave. Dusted off with some Killer Hogs rub.

Other than using more cheese next time, this was dang awesome. Click image for larger version

Wow, I think I smoked my first fatty in 1974. Seriously, be careful with those things, they can be a habit-forming gateway cook...

Damn. I just turned 10 in 1974. But it wasn’t long after before I found the light. 😁😂

Actually it was a store made sweet Italian sausage. Nothing special.

Steve B You mention sauce, but it doesn't show in the pics. I imagine it was a very light amount? Also, what temp used and what temp pulled? Thxs as this looks soooo delicious!

GolfGeezer Yes light on the sauce. I didn't want it to get too runny inside.
        I ran 250* and pulled it @155

Looks really good. A new variation of Bacon Explosion.
About 10 years ago my son said it looks like a big turd, I made it anyway.
Now it is his signature dish for get-togethers.
        Got to love it.
        They pair well with PBR.
