    I was going to do the Barbacoa in the IntsantPot, but it was being a POS so I threw it in the oven. I think I'm glad I did, but it still would have been good in the pressure cooker. Also I really hope people stop panic buying stuff, as much as I'm fine with getting better at making my own tortillas I shouldn't have to since I live within half a mile of three tortilla factories.

    Cooked up some Porter Road spares and a small pork butt that we used about half of to make some sausage. No after finished photos - the ribs went in a day (my wife killed them), and most of the butt is gone after visits from my daughter to pick up the grand kids - she takes a little every day. Used Hank's rub on the butt, MMD on the ribs. Made some of the KC Classic BBQ sauce from the free side - it was a big hit. The Porter Road ribs were pretty excellent; I will be buying from them again.

    My thanks to Attjack for sharing the recipe. I brined this last year, froze and vacuum sealed and broke it out tonight because I got tired of waiting for my other brisket to finish brining (time miscalculation on my part). Only photo, forgot to take photo's last year of the whole process.

    And even more thanks to Meat Head for the brining tutorial and the calculator from Dr. Blonder!

    Seeing jfmorris post on Corned Beef And Cabbage last week, it inspired me to get a smaller packer I saw at the grocery store. But I’m a day late for March 17 corned beef dinner, having a cold over the weekend put me a little behind on the process. But, tonight, was able to serve the kids (19 and 15) their first Corned Beef, cabbage, potatoes and carrots. I didn’t know how they would take to the corned beef, I figured they would like it and they did.

    I followed the recipe from Meathead on corned beef but used the sous vide method I found on Serious Eats to cook this. After the brine period, I took the brisket and vac sealed and into the water bath at 180* for 10 hours and then an ice shock and fridge rest over night. Sliced up perfectly then I warmed it up gently with some liquid from the pot of cabbage, potatoes and carrots. Served it up with some spicy mustard.

    enjoyed this meal - now on to smoke the other half of the brisket for grilled pastrami sammiches this weekend!

    I figured out a trick by accident. If you start with meat right out of the fridge, dry, and season. Then do an indirect kettle hot 350ish with smoke wood on grate above. It's money every time. Best way I can describe it. It's prime rib with a delicious bark.
