    A5 wagyu with bone marrow mashed potatoes. Took the tater recipe from one of my YouTube favorites googafoods. Some people dont like to cook wagyu sousvide but it turns out absolutely mouth watering and perfect. Cooked at 129 f for 1 hour and lost almost no juices. Seared in cast iron.

      Kroger Choice brisket wet aged 30 days. Dry rubbed with Meat Church Holy Cow. Jiccard tool used. Wrapped at stall in brown paper. Flat finished at 200 F. Probe tender and jiggly. Rested for four hours. Have done a few Primes but didnt wet age those. This is my best brisket so far in the brisket pursuit...

        Finally got on the tri tip train. Used Troutman's method with some Henrik beef rub, served with Hasselbeck sweet potatoes and some brussel sprouts with bacon. Wife said this is goooood, all I needed to hear. One side of the roast was pretty thin, I should have cut it off and cooked it separately. It was a little past medium. I will be doing this cut again. Snuck into Mr. Bones place to get the plates.

          klflowers some folks fold the tip under and tie it so that it approximates the thickness of the rest of the cut. May be easier to consider it a burnt offering.

        Couldn't resist the beautiful Columbia River salmon from the fishmonger today. Cooked it over a live fire on the Buckaroo. Served with sous vide corn and salad.

          Hi fzxdoc - I use the Buckaroo **more** than I had anticipated. This is primarily because it is so fast to get the fire started with the built in blower system. I can be up and cooking faster with this grill than I can with my Weber gasser.

        Pulled pork nachos!
        Smoked on the PBC with one chunk of peach, one chunk of apple, and one chunk of cherry. Put on the grate at 195 IT, no wrap. Smoked 3, 4-5# bone in partial butts. Topped with cheddar, pepper jack, a local pico de Gallo, sliced fresh jalapeño, a basic guac with lime, cilantro, jalapeño, salt, black pepper.

        Dry brined with PBC AP rub and rubbed with mmd before smokin.

        Four days ago Skip posted his stuffed pork loin Ruben, from Steven Raichlen's recipe. I had to do this....

        OMG fantastic. So tasty! And to do the full thing...buttered rye bread as a base with homemade Russian dressing (1 cup mayo, 1/2 cup chilli sauce -- Heinz makes a good one, it's basically spicy ketchup --, and 1/3 cup sweet pickle relish).

        Check. This. Out!

        An insane amount of that tri tip on some ciabatta bread with swiss, mayo and tomato for lunch. It was even better on the sandwich.

        I had leftover pulled pork from this weekend so I made tamales. Mixed the pork with a blend if ancho and Pasilla chiles with garlic and cumin.

          I toasted some ancho and pasilla chiles and then soaked them in hot water until soft. Blended them with the water, garlic, and cumin. Heated that sauce in a skillet and added leftover pulled pork.

          Mada a masa dough (masa, salt, baking powder, chicken stock, lard). Soak corn husk in water for 10 minutes. Spread the masa out onto husk. Put pork in the middle. Fold the husk over the mixture.

          Steam for about an hour.

          My crew (8-10 of us) does tamales at least once a year when it gets cold. We'll assemble lots of stuffing options; butt, chuck, yardbirds, mushroom, bean, cheese etc.
          We've moved away from lard to corn oil in the masa mixture. It just seems to be easier to work with and doesn't sacrifice flavor at all.
          I'll post pics when it happens. Probably Jan on one of the playoff weekends.
