      Troutman i did this one on the wsm at around 275. The skin looks better than it was but the meat was excellent. I need to ditch the water pan.

    Yesterday's menu consisted of yet another no-knead bread in the Lodge Dutch oven, this time baked on the gas grill, to keep the heat out of the kitchen - it was 97F here on October 5th! Oh - I did whole wheat this time. It definitely had less rise and was denser, but still good. I then prepared a 5# pork loin, that I dry brined, stuffed with apple pie filling, rubbed with MMD, and wrapped with 13 strips of bacon. It smoked for 2 hours at 225F, then rain started rolling in, I cranked the SNS+PartyQ to 350, and got it done, sadly getting drenched in the process. While getting soaked I tossed some veggies on the Grillgrates on the Genesis. It all paired well with a good home-brew Irish Red ale.

    All in all, it was a good day, a good dinner, and got to hang out and share it with some of my kids.

    The only thing that was a little weird was how the apple pie filling cooked down more than expected, and I am not sure why some of the stuffing in the center turned white? A ton of apple pie filling ended up coming out the ends I think, as there was a lot in the DNG, which I need to retrieve and clean up some time today. All in all though, this was an extremely moist and flavorful pork loin.

            Slow cooked a Chuck roast in a Lodge cast skillet with lid, then reverse seared it in a Red wine - Balsalmic reduction. Served in spaghetti and a red sauce from Kenji's collection of marinara, and some fresh Parmesan reggiano grated . Not pictured was a slice of sourdough I had forgotten to add.

                Whst cooker are you using looks interesting. I see it doesn't have grates and things are like just hanging in it.
                Chukies look good. I also have tended to slightly overcook chuckies when cooking for slicing. Still taste good.

With creamed horseradish sauce and chimichurri sauce on the side of course. Grilled Elk sausages. Burgers and hot dogs with all the fixns’ for the great grandchildren. Smoked smashed potatoes. Charred Mexican corn salad. Potato salad. Grilled veggie kebabs. Cookies and pies for dessert.

              Planned to take lot of pictures but,………………as you can see that didn’t happen. Way to busy sorry.
              Exhausted but with a BIG smile on my face.
