          What type of Cappuccino maker do you have? I still have yet to really make a good cup of that. I have a french press, and an aero press. but, admit to not ever really putting the time into it. I really do not need another rabbit hole to go down.

        forgive the photos clarity and amount of them, either my little camera lens was dirty, or my eye glasses are blury, or both, or.. but.. Brisket point chili was a success at the friends chili cook off, 31 chili's and it took the win. served with a little avocado, feta, and sour cream. but. really just a fun day with friends. a few of the photos. including a few previous photos.

          HawkerXP there were two knives used, and like 20 other pans, plates, dishes..etc.. I am certain about one thing, when I cook, I always make a great mess.

        Went to Wegmans earlier this week. Know this is a limited geographic store, Northeast. And that's too bad. Rated #1 again.
        Anyway, picked up a package of 4 choice NY Strips. Each individually vacuum sealed. Roughly 12 to 14 oz a piece.
        Did on Kettle with SnS, chunk of hckory. Indirect with reverse sear. Grilled baked potato. Here's the results.
        Update: I had a chunk leftover. Sliced thin, on bulke roll (poppy seed). Topped with slice of Boars Head 3 Cheese Colby Jack. Man, it was good. Some slaw on the side. Sorry, never thought of pictures.

          Wegman’s just opened in Raleigh last week, 3000 people in line for that (!!!) They’ve started building the one in Cary, and one 10 min from me over in Chapel Hill is breaking ground in the Spring. Been to one in Fredericksburg, VA years ago and was blown away. Dinner looks good!

          I didn't think to look /ask for a tri tip. Will on the next visit.

          Coworker of mine is from Argentina, so I was inspired to try Flap Steak with chimichurri sauce.

          The Argentinians may know a little bit about beef... lol

          ETA: yes, I meant to write flap steak not flank. They had it in my Costco. Cooked on a PK original, directly over the coals, flipping every 45 seconds. Till I hit around 125-130. Let rest for 5 minutes to retain liquid & carryover cook to medium. Chimichurri recipe here (I omitted the onion & bell pepper as I don’t like them raw):

            It’s bottom sirloin, right next to the flank cut. It should be similar, but it’s been too long since I’ve had flank to say for sure.

            Very impressed with flap though, cut across the grain it was ribeye tender.

            We asked my father-in-law where he wanted us to take him for dinner for his 82nd birthday. He said he wanted me to grill something, and whatever I wanted to make was fine but... he really wanted “that chicken”. 😂 The PBC is magical on yardbird. One got PBC AP rub, the other got East Texas Chicken Tickler, dry brined overnight. He ate it up, and took 1/2 chicken home!

              NY Strips from Crowd Cow. Grain finished on the left from Hutterian Farm, grass finished on the right from Carman Ranch. Both delicious. The grass finished had a slightly sour finish and was surprisingly juicy considering the lack of marbling. The grain finished had a classic beefy flavor.

              Cooked direct this time. No fancy reverse sear. On the PK Grill with Fogo Premium Lump.

              And I hate broccoli but ate it anyway. And ore-ida fries for the kids. And me too I guess.
