    I spent much of a day this past August trying to barbecue this brisket in my dying smoker. So now it's out of the freezer and braising in beer till either (1) it's tender, or (2a) I chop it up for a ragu (if I'm creative) or (2b) sloppy joes (if I'm not).

    UPDATE: Deliciously tender, though it took eight hours to get there. I'd hoped the hours in the smoker would've counter.

      Local leg of lamb chop. Dry brined for about 6 hours, then a quick marinade in sheep dip. Reverse seared in the kettle with slow n sear. The wife loved it and she's picky about lamb. If I did it again I'd pull it a little sooner (140ish) and let it finish cooking while it rests. It was very slightly over done, but still quite juicy and delicious. It was my first time using the sheep dip and it's definitely a keeper.

            This is from a few weeks ago but our first time doing J-poppers on the gasser/grill grates. Split Jalapenos, removed seeds and filled with Boursin cheese, shredded cheddar and bacon bits. Threw a handful of pellets on the grate for a little smoke and we had some nice appetizers. Next time, triple receipe! Click image for larger version

            This is an 8 pound pork butt that I removed the bone before dry brining, and cut into halves (for more bark) before adding my rub. I'm about 9 hours in and they're looking good.

              Here's the pulled pork from today's cook on my SnS Kamado & a shot before shredding. My Mom recently told me she didn't really like pulled pork, but she enjoyed several bites of this, without any sauce added.

                Lots of tri tip posts here and I've been intrigued as I've never cooked that particular cut. When I found a 2.25lb prime tri tip I knew I had to give it a go.
                After an overnight dry brine I applied a nice coat of Henrik beef rub.
                Went on my primo at 225 for about an hour until 120 internal then I pulled it and let the cooker come up to sear temp. Back on for the reverse sear and then a brief rest before carving. Whoa! I'll be doing this again.
