      Smash Burgers and fries, ( i tried Kenji's method on fries in The Food Lab), the fries not turn out very well, but, I believe I know where I made my mistake, and an easier way to correct it, but, to me failures are better ways of learning. Today was Infusion #180 I have big plans for cooking over the next 3 days if my body allows.         Richard Chrz I have tried the Thermoworks recipe for double frying French (actually Belgian) fries with beef tallow I had rendered and frozen. I did it outside on the grill with an enameled cast iron as well! I probably cut the fries too big, and it took a long time, and they weren't as crisp as we had hoped. My family felt they tasted too much of tallow. What issues did you encounter, what techniques did you attempt? Inquiring minds want to know.

      Found pork loin on sale, so it hit the smoker tonight with a coating of my modified MMD, and some brown sugar on top of that a la Huskies rib rub. I liked the extra sugar, but next attempt will be with toasted sugar instead of brown just to try and temper the sweetness a little. The cook was 2 hours at 225, then cranked the heat up to 325 to finish it off. Total cook time was about 3 hours to get to an internal of 140. It certainly wasn't the best cook I've ever done, but pretty good for a work night supper.

      Some brats from the House of Meats in Toledo OH. Great store. 2 chicken with feta and 3 beer brats. No plating pics, but had some slaw with them and a Grolsch

        klflowers LOL it's an undisclosed government location. One of my co-workers used to bottle up her own mix of 'Christmas Cheer', and used the Grolsch flip-tops to package it. After it was consumed AT HOME haha we would return the bottle to her.

        She retired before I remembered to give the bottle back, and it's just been sitting in my desk drawer since.

      Rib cravings this week but didn't have time to do on bbq so 1st time doing ribs in the kitchen. Baby backs in a rub on wire rack over some water and covered in foil 2 and half hours and done with 20 minutes back in the oven in a modified store bbq sauce with bacardi & coke. Fall off the bone but not the same fun as a few hours on the bbq with smoke
