      Do it! You’re gonna love it. I’m excited to put it in all the usual dishes I’d normally use with my leftover brisket. It’s gonna add a lot of variety.

    If you are doing long smokes and taking it to a point where it pulls (200+) , you can also use mutton (cheaper). Smoked shanks are delicious...

      Oh great! Thanks ðŸℒ. What’s the difference in flavor between lamb and mutton? Or is there none given the 200+ cooking?
