I combined elements from three or four recipes and youtube videos to come up with this recipe. This is the first sausage I made when I received my new grinder last month. I have Italian friends and in my experience the subject of a good Italian sausage recipe starts more family arguments than any other food related topic. I personally like the recipe I came up with so I hope it meets with approval (be kind, I'm not Italian ).
Sorry for the weird measurements but I made 8lbs and decided to convert the recipe to a 1 lb version so scaling up would be easy to calculate. I ground the pork with a 1/4" plate.
1 lb pork
9.3 grams Kosher salt
1.3 clove of garlic, pressed
2 tsp. fennel seeds - toasted in a cast iron skillet
2/3 tsp fine ground black pepper
2/3 tsp crushed red pepper flakes
1/3 tsp ground cayenne
1/3 tsp dried oregano leaves
1/3 tsp dried marjoram leaves
1 tsp sugar
1/6 tsp ground coriander
1 pinch allspice
1/6 tsp ground mustard
1/8 bunch of Italian parsley, minced
2 tsp cold water
25 ml dry red wine (I recommend Chianti)
Optional - 1/3 tsp whole anise seeds - I didn't have any so I didn't use them, several recipes I found called for this.
Combine all ingredients. Either divide and freeze as bulk sausage or stuff and grill as needed.
