Elk sausage temps

    Elk sausage temps

    The family is coming over this week end and I will be doing some Tri Tips on the grill. One of my daughters is bring over some Elk sausage links. I have not cooked them before and am wondering what temp to cook them too. Thanks in advance.

    It's ground meat, so 160°F minimum.

      Willy That's what I thought, thanks. Just wanted to make sure, I know it is very lean.

        I agree any sausage should be cooked to 160.

          I would go to 160 F, as well. But make sure not to go much over that.

          Enjoy, that is going to be some incredible stuff. Elk and Moose are amazing wild meats. Really the only ones I care for.

            Treat wild red meat like beef as far as temps go. The only exception to 160 for ground meats is poultry (ie turkey burgers), it needs to be 165.
