    Cacio e Pepe

    I had very little time to cook last night. A friend has been suggesting this dish for a very long time.

    Something a little different. Some Cacio e Pepe with Sautéed Chicken. Basically Pasta with Pecorino Romano Cheese in a light creamy sauce flavored with fragrant cracked pepper. The sauce is made using the starchy pasta water. This dish is an amazing blank canvas to cook with. The flavors were in your face good. Not subtle but bold yet delicate at the same time.

    I can't believe I've never tried this before. Simple but unbelievably good. I sort of used the recipe below.

    This authentic Cacio e Pepe recipe requires only 20 minutes and 6 ingredients to make creamy, dreamy pasta WITHOUT any cream!

    The Mrs just did this for the first time early in the week. Not that particular recipe. Gotta agree, it was good. We'll be making it again. I think proteins are fairly interchangeable.

      Yes indeed...I may also add some finely chopped broccoli or sun dried tomatoes. Again I sort of view this a a blank canvas.
