Sounds interesting. I usually make red beans and rice using the slow cooker. Always use andouille and a real smoked pork hock (not smoked by yours truly). So good.
My wife made this batch from a Frug recipe ("The Frug Cooks American"), amped up with 2 # of andouille plus a can of diced 'maters. Used it to top shredded spaghetti squash instead of rice.
Hmm. Since the rice doesn't go in the pot anyway that's a pretty good idea. I recently smoked my spaghetti squash, and I could taste the smoke, so it's worth it.
