It's off the charts sharp. They're about an hour away from where I live, my wife and I go there a few times a year. It's like walking into cheese heaven.
Not sure how I missed this thread the first time around. I've been on a smoked gouda kick lately. Delicious on a big fat juicy 1/2 lb steakhouse burger.
I chose pepper jack but really any of them works. Anyone ever tried asiago cheese on a burger? It's very similar to parmesan but it makes for an interesting taste, especially if you add some marinara sauce.
I find asiago pretty astringent ... I think you might lose the burger flavor to the cheese. But then I think bechamel (white) sauce is almost too spicy
