Smoking burgers, cool, vacuum and grill another day.
I wanna smoke some Burgers for the first time. I did read the article on smoking burgers. I was wondering, if I want to smoke a burger ahead of time, then cool and vacuum pack it so I just have to finish grilling them the next time I wanna eat them...I know that I would have to smoke them to at least 140F IT. Would the burgers still taste ok if I grill them to 160F IT? I will grind my own meat, I guess I could up the fat content to maybe 30% so they won't dry out during the grilling process.
