That would be pretty typical at a Texas BBQ joint. I usually don’t have room for dessert after BBQ.

That looks pretty similar to the one my wife makes (I think she got it from Paula Deen), except she uses Pepperidge Farms Chessmen cookies instead of vanilla wafers.

Banana pudding. Here is a easy, no cook recipe:

Several years ago (OK, a couple of decades ago) I worked with a young lady that always brought banana pudding to office parties. It was very good, and I pestered her for the recipe but

Beyond the cobblers and banana pudding mentioned above, home made ice cream is always a good option if you have one or more ice cream makers around.

@ JoeSousa, Plus you can make it the day before so you don't have to worry about it the day of the cookout.

Smoked peaches with brown sugar, vanilla, butter and cinnamon. Add ice cream if you choose.

I figured Google would have all the info but I plan to ask my family for some apple pie recipes first, then I can modify them.

My wife makes a not from a box no bake cheesecake. It’s a lighter dessert imo. After eating a lot of meat, it is refreshing. That’s the only thing I offer when customers ask about dessert options. I’ve not sold many, people think box when they think no bake, but lemme tell ya. She works her butt off for my side gig.
