A reader on the public site shared this great video from the wgbh.org archives on Joyce Chen's Peking Duck. She uses a bicycle pump to separate the skin, that part is near the 15:30 mark give or take, but starting at 14:30 is good info. Interesting. video, wish it would have covered the entire cooking process though. I'm interested in authentic Chinese cooking, not the cheap buffet style restaurants that we have here. I went ahead and bought her cookbook published in 1962. On amazon sellers want hundreds of dollars for it. On ebay I got it for $19.00
