Pretty simple, but fairly tasty, Sunday dinner – grilled dry rubbed chicken, sweet onions, pineapple and red bell peppers sliced and served over basmati rice cooked in chicken broth. (One thing I found interesting was the suggestion to do the onions and bell pepper over low heat to assure internal cooking.)
