    Oklahoma Joe Bronco drum smoker results chickens

    I spathcocked and dry brined these birds and then seasoned with "Rudy's Turkey Rub" which I had laying around. The smoker got to about 220 and I had some wood added to the charcoal so we got nice smoke. I didnt really use enough coals so when they were 135F internal I finished them in the oven. Crisp skin, moist flesh. Next time I add more coals!

      Chicken can suck the life out of a barrel smoker. I run them 350-400.
