    Vetkoek and smoked chicken breasts

    "Vetkoek" direct translation” Fat Cake” is a basic dough that is deep fried and filled with anything from savoury to sweet. I smoked skinless chicken breast that was in a wet brine of salt and sugar for a few hours. Smoked to IT of 65C without any rub. Sliced and seasoned with BBQ spice rub and finished on flattop. This was the filling for the Vetkoek and a squeeze of KC style BBQ sauce.
