    Disney style turkey legs. Extra Brine???

    I am thinking of smoking about 10-20 1.5-2lb turkey legs using the recipe listed on this website. Can I make extra brine to completely submerge the legs in brine in a couple 5 gallon buckets? Will the extra brine change the time they should stay in the brine?

      As long as the salt concentration remains about the same it doesn’t matter how much it is. 6% is 6% in one pint or in 10 gallons.

            Don't change the recipe itself, if you need more brine, make separate batches and add that to the buckets. Dr. Blonder and Meathead have worked to make sure the recipe is safe, please stick with the proper concentrations. (Similar to what others have said.)
