    Smoked chicken

    I cooked a whole chicken today on my pellet smoker and it turned out pretty good. I remember reading something Meathead mentioned about not letting the smoke over power the chicken and pellet smoker was just right today. I splatchcocked the 2kg bird, dry brined it, then added LT Italian vinaigrette and let it soak for a while in the refrigerators before I smoked it. It took about three hours until the breast meat was up to 165F. The results was a juicy and flavourful bird. Turned the temperature up 275F after the first hour or so to get the skin to brown.

                I used Meatheads LT Italian salad dressing which has vegetable oil in it. So yes ther is oil on the skin.
