    Roadside Chicken showdown

    I wanted to find a go-to recipe for Pollo Adabo for street tacos and narrowed it down to two with the idea of choosing a favorite. Rick Bayless and Patio Daddio. End result? Lol, now I have two recipes instead of one. I couldn't decide which I liked better. Both were outstanding. Went too my local Mexican store for ingredients. ID:	472349 cooked on the PBC to IT 160 monitoring with the smoke thermometer. One small chunk of mesquite for smoke. Cook finished in 1.5 hrs Highly recommend both recipes. Rick Bayless on the left in the barrel and first pic, Patio Daddio on right and bottom pic.

      I know what ya mean. I've got two smokers and two kettles with the Slow-n-Sear and tried chicken on all of them in all different manners and the PBC just shines with chicken. It's to the point I won't cook chicken on anything but the PBC.
