        Meatheads recipe, I added the shrooms cause they were in the fridge and I thought they’d be good in the white sauce.

        • Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories.               I tried Big Bob Gibson's white sauce on thighs. Came out looking just like your pic. Did not care for the white sauce. Is Meathead's sauce better??

                When I grew up (in Northern Alabama), any chicken not fried was slathered in white sauce ... with a couple of differences. The chicken was basted with the sauce while cooking and the sauce itself was a little sweeter than MH's. I use MH's sauce recipe but add a TBSP of sugar to balance the acidity and to make it taste like what I remember from childhood.
