    I stumbled upon this recipe and thought it was interesting. They say bake your wings at 400Β° for about 45 minutes and then coat them with a ginger soy glaze and put them back on.

    I'm going to give this a go this weekend for halftime munchies.πŸ‘

      Your assumption is correct. It's much easier to maintain a perfect 400Β° On the BGE than on the Weber kettle. I'll use my DigiQ Dx2 and set it for 400Β°. Easy peasy.πŸ‘

    I do wings like this often with cherry wood on the kettle and I can confirm that this is a great method. I find, however, that it takes more like 60 - 75 minutes to properly render the fat and get the right crispiness, even when cooking at 400+.

    I have been adding the following rub before smoking (MMD also works):

    2 tblsp chili powder
    2 tspn brown sugar
    1 tspn white sugar
    1 tspn powdered ginger
    1/2 tspn nutmeg
    1 tspn black pepper
    1 tsp onion powder
    1 tsp garlic powder
    pinch cayenne to taste

    I agree with their finishing method for sauce. My finishing sauces of late have been either a 40/20/40 blend of Franks/Sriracha/Melted Butter or a 45/45/10 blend of Sriracha/Honey/Vinegar.
