    S&G Chicken

I've been diligently practicing on the Yoder Cimarron! This weekend, I did chicken halves with S&G Rub. I used a new wet brine and the white meat was almost lunchmeat texture (I will back off either salt or brine time). Made a batch of S&G and sprinkled it over the chicken halves. Finished with a soy sauce/adobo glaze. This was some mighty fine chicken (naturally no photos)! I'm thinking I may have to try this in competition with a red sauce to give the chicken some color.

I love S&G on chicken, turkey and pork loins. Darn - no photos.

CandySueQ Do you have the standard Cimmaron with the competition cart? Or did you have Yoder modify it in some way?

This cook I took out the deflector closest to the firepot and slid the far one over. Put my rib hanging rods over the firepot and put a SS full size pan over the firepot to knock ash down. Worked well and lightens the weight up some. I'm going to find my comfort zone with this cooker!

Plus, I can put water in the pan! I think I'll practice another butt & brisket this weekend!
