I'm doing a couple turkeys with the usual S&G rub plus a butter injection. I'll also be dry brining starting tomorrow morning.
I'm considering doing two things differently than before. 1, I'm cosmdiering doing an injection of butter and honey mixture. 2, I'm considering rubbing honey and butter under the skin prior to putting the rub and olive oil mixture under the skin.
Has anyone done anything similar and if so how did it turn out? Bad idea?
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.
