    Homemade Egg McMuffin

After making English muffins the other day, I got the idea to make an Egg McMuffin, and it was very good, but not over the top great. Still, it was better than the Real Deal. I used a home made English muffin, Wright's thick cut bacon, and Boar's Head American cheese. I will do it again...

I almost forgot to take a photo, so here it is with two bites missing - sorry.

Looks great. Make some jalapeno cheddar grits, spread them out thin in a parchment lined sheet and refrigerate. Use a biscuit cutter to cut out rounds and fry in a skillet with bacon grease. Add that....

Looks good, Ron. I prefer sausage for once, not bacon, for sandwiches like this. I am looking at your recipe along with others for my next attempt at English muffins.

I agree - sausage is better, but my wife doesn't even like to smell sausage, so that was a no go...

I agree, I meant to say McD's uses Canadian bacon.

You're missing the runny yoke. Nothing better than a fresh McMuffin with yoke running down one's chin.

As classic a sandwich as the cheeseburger IMO!
