Bagel lightly toasted or warmed. Spread each half with a generous layer of plain cream cheese. Lightly sprinkle cream cheese with a seasoned salt or rub of choice. Layer with thinly sliced grilled tri tip or meat of choice. Garnish with avocado or tomato (or both) if desired. Serve as open face sandwiches on the deck with good coffee and fresh fruit.

      Sounds good.

One of my favorite things to do is take a sausage roll (Bob Evans, Jimmy Dean, etc) and unwrap it, leave it whole. Roll it in brown sugar, ends too, and pat it on so it sticks best you can. Grill/smoke indirectly at 275-325 until it hits 160 IT. Then slice & serve. I have ruined myself and many other folks from ever frying it again with this super simple & tasty method of doing common breakfast sausage. Allow a good 60-90 min though.

CandySueQ Good question, never tried it. I smoke while cooking, so the br sugar picks some up anyway. I suspect it would be fine, maybe not even noticeable depending which device you used to cook it. I do mine on the Smokey Joe with charcoal and a wood chunk.

CandySueQ, I would have to eat it while hiding in the closet.

I'm making breakfast for Church this coming Sunday and will be serving grillades (or carne guisada) and garlic cheese grits. The grillades will be made from smoked brisket and Melissa Guerra's recipe for carne guisada. You could also use George Strait's recipe. The grits will be Paula Deen's recipe.

I plan to smoke a brisket point, seasoned with salt (dry-brining now) and Big Bad Beef Rub, for an hour or two in my Redi-Smoke electric smoker before cutting it up into cubes and proceeding with Melissa's recipe.

Flour tortillas, scrambled eggs, Bananas Foster bread pudding, and OJ or fruit will round it out.

      South Texas meets New Orleans.
