I smoked some St. Louis ribs yesterday and they turned out great. I had a few left and this morning I chopped up the meat and mixed in some BBQ sauce. I then toasted a thick slice of sourdough bread, topped it with basic guacamole (smashed avocado, olive oil, lime juice, salt and pepper). I then added the BBQ meat and topped with cilantro and pickled red onion.
Add a sunny side up egg and some hot sauce... Breakfast of champions!
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.
