Something I really enjoy doing is looking in the fridge and coming up with a way to use up leftovers. Today's challenge was breakfast using some of the leftover bottom round from the other day. I also had some mushrooms, green peppers, and ricotta.
​​​​Carmelize some onions.
Saute the mushrooms.
Cube the roast and chop the peppers, then everyone into the pan.
Whisk some eggs and in they go.
Mix in the onion and ricotta.
Plated.
A little bit of Tobasco Chipotle to round out the flavor. I think I will be full until dinner.
