    Thermoworks Bacon Recipe

    I tried the this recipe and got to try the final product today. The only changes I made was use an extra TBS of black pepper in the curing mix and sprinkle the slabs with a good amount of jalapeño seasoning prior to smoking. I also followed their recommendation to not rinse the cure before smoking. Went from the fridge straight to the Rec Tec. If you like a spicy bacon give this a try. I've made MH's recipes and like them, but this is my favorite so far. I love this stuff!

      It's a homemade version:

      I blend dried jalapeño to a powder and then mix in the following quantities:

      3 TBS Jalapeno powder
      1 TBS Onion powder
      1 TBS Garlic powder
      1 TBS Salt

      This was the first time I tried this blend. I think next time I'll bump the jalapeño powder unto 4 TBS, but I like HOT!
