As I continue to work through some starter questions, and how it translates to bake. I have this starter now doing 3 full feedings a day. Ramped it up last night to a 600 g levain. Seems to be chowing down that as well. Hoping tomorrow is bake day. I think I enjoy the starter maybe even more then baking.
I have been using various combinations. Between rye, KA 14%whole wheat and AP. Trying to get a gage in which one is more powerful right now. It is all old flower still from last January. Now it seems it can eat through anything... ( famous last words of a flop bake) lol
