    Ditching the Lame

    In docking today's loaf, the razor blade fell off the handle of my lame. I quickly grabbed a bread knife to finish (the razzor blade fell into the oven--ain't even trying to recover it! LOL) and, voila, much better docking. From here on out, bye, bye lame, hello bread knife!

    If I'm doing a straight cut, I use a bread knife too. If I'm doing a curved cut, I use a homemade lame.

      I started out using a good serrated knife to do my slashing, and I still use one, unless I'm getting fancy.

    It's not hard - just takes a little practice.
