    Vacuum packed brisket

    I’m sure this has been covered here but can’t find it. How long is a vacuum packed brisket good once thawed, but still refrigerated?

    Are you talking cryovac from the packer? Or vac sealed at home?

        Many can go 40++++++ days. If the bag starts expanding you got problems.

        If I vac’d it I would limit it to 3 - 5 days tops in fridge.

            I wet age them regularly in the fridge for 60 days. As long as there's no leak in the cryovac I've never had one spoil. When you open one there may be a slight odor, it will go away as soon as you rinse the brisket. As soon as the myoglobin is gone so is the odor. In my opinion it makes a very noticeable difference in tenderness. I use certified angus, choise briskets, this makes them better.

              It takes 3 day to thaw one out, I would not be scared after ten days after thawing.... sell by dates are always strong.
