I purchased four Flat Iron steaks on Friday for a Supper Club this Saturday. They are each in their own vacuum sealed package. Because they are sealed, is it ok to keep them in the fridge until Friday (will dry brine the night before) or do I need to freeze them and defrost for Friday's brine? I would think they are ok because they are sealed, similar to when I wet age a brisket for 30-40 days. I wouldn't go that long with these but you get the idea. As always, I appreciate your feedback!
