I pulled some pulled pork out of the freezer. I had leftover sautéed onions from last weekends cook. When trimming my Wagyu brisket I couldn't part with the fat so I rubbed it with big bad beef rub and put it on the grill above my brisket for 12 hours. It is delicious albeit I cant eat much at a time.
So I had some high quality hamburger meat, minced the brisket fat , onions and pulled pork, added in some Montreal steak seasoning and revers seared over the gasser.
Dang those are good. I mean like not tell the spousal unit and kids and keep them for myself good. the brisket fat thing is great. I am very happy with these "brisket rinds"
