    I do it at 129 for 4 hours then a good sear, comes out tender and juicy.

    Longer times will make it more tender. It would even be fine at two hours at 131, similar to just cooking it hot and fast. I’d start with 8-12 hours at 131. That will make it plenty tender. You can always experiment with different times to find your preferred method.

    According to the app for my Joule circulator, it’s 8 hours at 131 degrees.

    I usually only go 10-12 hours with a flank steak at that temp. Never had a complaint about tenderness and the texture is great as well
