    Just picked up a couple filets

    Grabbed these at the grocery store, will cook them tomorrow. The label says select, but looks like choice to me. What say you?

    For a tenderloin, that looks more like prime to me.

      Looking pretty good. Choice at minimum. Maybe prime. Regardless, cook them up and see how they come out! I bet they will be great.

        Update: Reverse seared them on the Green egg tonight and topped with a blue cheese butter. They were excellent.

            Man I love blue cheese anything. Try some blue cheese and honey on a cracker sometime for a nice snack.

          Tenderness often tells the story of Prime vs the others. I had a Prime brisket flat that had hardly any fat in it, but you could bend that thing just like an accordion.
