A couple of times recently I've seen 'beef bacon' mentioned. Only a couple of times.
Why don't more people talk about it? I assume it's the cow's version of pork belly. Is it a rarity? Is it more difficult to prepare? A hungry omnivore wants to know!
The prep is pretty much the same as pork bacon, it's just really hard to get beef belly at least where I'm at. I've never seen it in a store in the multiple states I've lived in, and only seen it on a menu once as well. It's great stuff though!

I like pork bacon just a touch on the limp side but the beef bacon is best crisped up a little.
Makes a bad boy BLT. IF you use Miracle Whip. Mayo I couldn't say as it is not allowed in the house.
