    Feels Like Cheating

    A good friend sent me a brisket from Hutchins BBQ for my birthday. It’s fully cooked, in cryovac, and frozen. I kept it in the freezer until today. Pulled it this morning, let it defrost slowly at room temp. Mid-afternoon, fired up the Hasty-Bake with Kingsford Pro and red oak in a modified fuse. Put a water pan on the firebox, heat shield in place. Grate temp running about 275F. The brisket was 35F internal when I put it on in a foil pan. It smells tremendous. I hear that Hutchins makes fantastic Q .... let’s see how it goes when I reheat a previously cooked brisket.

        Cheating, smeating….heat up a pan of beanz and slice those babies up.
        I don't see any problem going with pre-fully cooked brisket.
        Instant gratification.

          So far it’s pretty damn good ... smell, appearance, probe, and tested a small corner. Just waiting for the side dishes now .... and it only took me 2.5 hours from start to resting in the oven :-)

                          well, as expected, reheated is not the same .... huge compliment from my wife: "I would have rather had your brisket, this is a bit dry, but the bark is pretty good, almost as good as yours."
