    Brisket Cook

    Hey All,
    I have not posted in a while but have been lurking. I finally got some time after all this COVID-19 madness to check-in. This is my first brisket managed with the Fireboard using Post Oak for the smoke. It came out pretty juicy and the point was falling apart. I am still relatively new to smoking briskets but it came out tasty. Click image for larger version

                Thanks for the comments. I set the Fireboard up for 250° but it was consistently running about 10° over the set temp. I was a little worried about it drying out. I ended up wrapping it in pink butcher paper, which I have never done before.
