So which wood did you end up using and how long into the cook did you stop adding to it?
The color's off a little on this one because of the overhead lighting, but this 11-pounder whole went to almost 170 before the stall and wrapping. I'm cooking these now between 275-300, so things are a bit faster, but I started with 2 chunks of Oak, added 2 more after an hour & 2 more after another 90 minutes. The stall/wrap was at 4 hours.
