    Tomahawk on the Parrilla

    I bought a big bad tomahawk a week ago, just waiting for the right time. Yesterday the sun was shining, and I had my newly tweaked Parrilla ready for action. So I fired it up with birch wood, and kept feeding the flames until I had some glowing embers. The tomahawk was a 4lb'er, almost 3 inches thick.

    I grilled it over medium heat for 40 minutes, then let it rest for 10. Target temp: 58° C / 136° F. I just sprinkled salt on it, and then ate it right off the cutting board with a glass of red wine. It doesn't get much better!


    Fire, fire, fire!

      Thank you Steve! This one is definitely gonna go on my 'heavy rotation' list for grilling. I really enjoy 'slow food', and this is a great way of doing it.

              Beautiful steak, great grill and very nice cook. I love the shot of it starting out on the stump!

              Interesting that you used Birch. Is that your "go to" wood there? What other woods do you have readily available in your area?

              Might I suggest that next time you season it with some of this stuff? I tried some the other night and it was really good!

                Thank you! Yes, Birch is everywhere around here. Great wood for direct heat, but I would never (ever) use it for smoke. Might just try that rub, looks like a winner to me ;-)

                That parrilla works like a charm..
                I've tried using birch as smokewood on chicken and it gave a mild but a bit different taste on the meat..

                  I use birch for grilling, but the smoke flavor is NOT good (according to my personal preferences).
