    First brisket cook in 2 years...

    14 lb Prime brisket. Haven’t cooked one in probably 2 years. Seasoned liberally with Q-Salt, followed by a good dusting of Texas BBQ Grand Champion rub. Was still semi-frozen in the middle. Oh well, it thawed fast enough... lol. Went w/ 210° all night and double wrapped in butcher paper in the morning when bark looked good (around 160-165° IT)... then jacked the temp to 250ish° til done. Gave it a 6 hour rest. Best personal brisket to date. Not sure why I rarely do them as the family LOVED it! That’s gonna have to change

                  Yeah, with a cook like that I have no idea why you waited two years. Based on those photos I agree you should not wait that long again. Great cook!

                            Oh my God, that is a picture-perfect brisket. It looks to me that you have not lost the touch, and that is a contest winner to me. Thank you for the pictures, it makes me feel like I will be able to do it that good one day
