                  I'd still be sleeping I never get up till 6. Start the fire, have thhe DigiQ take it up to 275. I dry brined it morning before, so as the Weber heats up I finish the rub. Pepper, cumin, and a little cayenne. 10-12 hours later for a 14lb with little stall it is done and I cover with foil and a towel.

                    I think the only reason I run smoke is because I can set it up and let it run while I sleep. If I had to get up at 3:30 am to cook. I would likely order carry out. lol I start fire by 8 or 9, have it dialed in by 10, go to sleep.

                  Came out pretty good. Ribs were great. Brisket tender and juicy.

                    There was one bad piece on the left end of the wibs & maybe one half bad piece, the middle, of the brisket. Now when I see bad pieces I dispose of them discreetly & speedily just so no one notices that they were bad. 🕶
